Paleo update

I have now made it two weeks on a paleo lifestyle (save for the ice cream cone in Disneyland...there was no chance I was skipping that!) and wanted to do a little update.
So far, paleo/primal is really not *that* far off from my eating style.
However, here are the daily things I am no longer consuming:
Real or processed sugars (goodbye Splenda-and good riddance!)
Dairy products (goodbye lunch yogurt and Daddy's smoked cheese<--this may kill me) Processed foods (goodbye 60-calorie Jello yogurt for dessert)
Here are the things I am loving the most
Eggs! I have a single egg scrambled with bell peppers, mushrooms, spinach and a little cubed chicken breast
Almond butter....crunchy! I was not a quick study to almond butter but the crunch version fulfills my longing for peanut butter
Homemade coconut bread and cinammon cake. Coconut and almond meal/flour are my new best friends
Coconut shrimp....hello shredded coconut goodness.
One thing I still crave is honey mustard.
I was eating it as a dressing on salads, on stir-fry veggies....
but of course, ingredient #2 = sugar = -->no more!
Stealthy honey mustard craving Erin bought regular old mustard and 100% real honey...mix the two with a little paprika and pepper and I am in honey mustard heaven again!

A common dinner for Chris and I would be a giant stir-fry. I love the colors and adding new ones (kale, parsnips, beets) has been fun. We were totally unable to find a sauce that was a)not soy based or b) had no added sugars. Alas, my brilliant PC found this.

Coconut Secret, Coconut Aminos

All the flavor of soy sauce, none of the soy and none of the added sugar. It is actually from the sap of the coconut tree and tastes nothing like coconut! He made an awesome stir-fry with it last night and had he not showed me the bottle I would have been sure it was Soy Vay.

For me it's going well. Last week my running legs were feeling a little depleted, but I think my body has gone through the initial adjustment and I have my legs back. We have been experimenting with several new recipes and our kitchen is full of new products that we are enjoying trying.

The goal is 2/9 until 4/9, right up to T&L's wedding....

I love coconut anything! I have not heard of this type of diet before. (Hm...I love cheeses, so this would be hard for me).
